  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them in a single layer on a baking sheet.
  3. In a separate small bowl, whisk together the maple syrup, Dijon mustard, apple cider vinegar, garlic powder, smoked paprika, salt, and pepper.
  4. Place the chicken breasts in the same bowl used for the sweet potatoes, drizzle with the remaining 1 tablespoon of olive oil, and toss to coat.
  5. Pour half of the maple glaze over the chicken and toss to coat evenly. Reserve the remaining glaze.
  6. Arrange the chicken on the baking sheet with the sweet potatoes.
  7. Bake for 20-25 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
  8. During the last 5 minutes of baking, brush the chicken with the reserved maple glaze.
  9. Garnish with fresh parsley before serving.
