This creamy Macaroni Corn Casserole is a comforting and flavorful side dish perfect for any occasion. Cheesy macaroni is combined with sweet corn for a simple yet satisfying bake that everyone will love.

  • 1 pound elbow macaroni
  • 1/2 cup butter, melted
  • 1/2 cup all-purpose flour
  • 3 cups milk
  • 4 cups shredded cheddar cheese, divided
  • 1 (15 ounce) can creamed corn
  • 1 (15 ounce) can whole kernel corn, drained
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish.
  2. Cook macaroni according to package directions. Drain and set aside.
  3. In a large saucepan, melt butter over medium heat. Whisk in flour until smooth. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
  4. Reduce heat to low and stir in 3 cups of cheddar cheese, creamed corn, whole kernel corn, salt, and pepper. Stir until cheese is melted and smooth.
  5. Add cooked macaroni to the cheese sauce and stir to combine.
  6. Pour macaroni mixture into the prepared baking dish. Sprinkle with the remaining 1 cup of cheddar cheese.
  7. Bake for 20-25 minutes, or until golden brown and bubbly.
  8. Let stand for 10 minutes before serving.

Notes

For a spicier kick, add a pinch of cayenne pepper to the cheese sauce.
