Loaded Potato Meatloaf

A savory meatloaf packed with creamy mashed potatoes, melted cheese, and crispy bacon, delivering a comforting twist on a classic favorite.

  • 1 lb ground beef
  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, mashed potatoes, cheddar cheese, crumbled bacon, onion, garlic, breadcrumbs, milk, egg, Worcestershire sauce, salt, pepper, and smoked paprika.
  3. Mix everything gently until just combined, being careful not to overmix.
  4. Shape the mixture into a loaf and place it in a lightly greased loaf pan or on a baking sheet.
  5. Bake for 50-60 minutes, or until the meatloaf is cooked through and the top is golden brown.
  6. Remove from oven and let rest for 10 minutes before slicing and serving.

Notes

For extra flavor, top the meatloaf with a layer of barbecue sauce or ketchup during the last 15 minutes of baking.
