This Loaded Hamburger Soup is a hearty and comforting meal packed with ground beef, vegetables, and cheesy goodness. It’s a delicious and easy way to enjoy the flavors of a classic cheeseburger in a warm, satisfying soup.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 cup frozen mixed vegetables
  • 1 cup shredded cheddar cheese
  • Optional toppings: sour cream, chopped green onions, bacon bits

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the pot and cook until softened, about 3-5 minutes.
  3. Stir in the Italian seasoning, salt, and pepper.
  4. Pour in the beef broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Add the kidney beans, corn, and frozen mixed vegetables to the pot. Continue to simmer for another 10 minutes, or until the vegetables are tender.
  6. Stir in the shredded cheddar cheese until melted and creamy.
  7. Serve hot and garnish with optional toppings such as sour cream, chopped green onions, and bacon bits.

Notes

For an extra layer of flavor, try adding a tablespoon of Worcestershire sauce to the soup while it’s simmering. You can also substitute ground turkey for the ground beef.
