Homemade Loaded Baked Potato with Sour Cream and Chives

These loaded baked potatoes are the ultimate comfort food! Fluffy potatoes are baked until tender and then piled high with your favorite toppings for a satisfying and customizable meal.

Ingredients

  • 4 large russet potatoes
  • 4 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 2 tablespoons butter, melted (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and scrub the potatoes. Pat them dry.
  3. Pierce each potato several times with a fork.
  4. Rub the potatoes with olive oil, salt, and pepper.
  5. Place the potatoes directly on the oven rack and bake for 60-75 minutes, or until they are easily pierced with a fork.
  6. Remove the potatoes from the oven and let them cool slightly.
  7. Carefully slice each potato lengthwise.
  8. Fluff the inside of the potatoes with a fork.
  9. Top with cheddar cheese, bacon, sour cream, and green onions. Add butter, if using.
  10. Serve immediately.

Notes

For extra flavor, try adding a dollop of chili or a sprinkle of your favorite hot sauce. You can also swap the cheddar cheese for another type, such as Monterey Jack or Pepper Jack.
