Limoncello Cookies

Limoncello Cookies are a zesty, tender treat infused with the bright citrus flavor of limoncello liqueur, perfect for an elegant dessert or a refreshing snack.

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup limoncello liqueur
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 2 lemons
  • 1 tablespoon fresh lemon juice
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then add vanilla extract, lemon zest, lemon juice, and limoncello liqueur. Mix until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
  6. Drop tablespoon-sized dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 12-14 minutes or until the edges are lightly golden.
  8. Remove from oven and let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
  9. Once cooled, dust with powdered sugar before serving.

Notes

For a more intense citrus flavor, substitute limoncello with fresh lemon extract or add a lemon glaze on top after baking.
