Lemon Raspberry Bars

Delightfully tangy and sweet, these Lemon Raspberry Bars combine a buttery crust with a luscious lemon filling and fresh raspberries for a refreshing dessert.

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1/4 tsp baking powder
  • 1/3 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 cup fresh raspberries
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, combine 1 cup flour and 1/4 cup sugar. Cut in the butter until mixture resembles coarse crumbs. Press firmly into the prepared pan.
  3. Bake crust for 15-18 minutes until lightly golden. Remove from oven and set aside.
  4. In a separate bowl, whisk together eggs, 3/4 cup sugar, 2 tbsp flour, and baking powder until smooth.
  5. Add lemon juice and zest to the egg mixture and stir to combine.
  6. Pour lemon filling over the warm crust, spreading evenly.
  7. Scatter fresh raspberries gently over the top.
  8. Bake for an additional 20-25 minutes, until filling is set and edges are lightly browned.
  9. Cool completely in the pan on a wire rack, then refrigerate for at least 2 hours.
  10. Remove from pan, dust with powdered sugar if desired, and cut into bars before serving.

Notes

For an extra burst of flavor, serve chilled with a dollop of whipped cream or a scoop of vanilla ice cream.
