  • 1 ½ cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • ¼ cup granulated sugar
  • 24 ounces cream cheese, softened
  • 1 ½ cups granulated sugar
  • 3 large eggs
  • ½ cup sour cream
  • 2 tablespoons lemon zest
  • ¼ cup lemon juice
  • 1 teaspoon vanilla extract
  • Yellow food coloring (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Press mixture into the bottom of the prepared pan.
  3. In a large bowl, beat cream cheese and 1 ½ cups sugar until smooth and creamy.
  4. Beat in eggs one at a time, then stir in sour cream, lemon zest, lemon juice, and vanilla extract.
  5. Pour half of the cheesecake batter over the graham cracker crust.
  6. In the remaining batter, add a few drops of yellow food coloring (if using) and stir to combine.
  7. Drop spoonfuls of the lemon batter over the plain cheesecake batter. Use a knife or skewer to swirl the batters together, creating a marbled effect.
  8. Bake for 30-35 minutes, or until the edges are set and the center is slightly jiggly.
  9. Let cool completely in the pan, then refrigerate for at least 2 hours before cutting into bars.

Notes

For a richer flavor, use full-fat cream cheese. Serve chilled and garnish with fresh lemon zest.
