Lemon Chicken Soup

Lemon Chicken Soup is a bright, comforting dish featuring tender chicken and fresh lemon in a flavorful broth, perfect for any season.

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 teaspoon lemon zest
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley
  • 1 cup cooked rice or orzo (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, minced garlic, carrots, and celery. Sauté until vegetables are tender, about 5-7 minutes.
  2. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes, allowing flavors to meld.
  3. Add the shredded cooked chicken, lemon juice, lemon zest, and dried thyme to the pot. Stir well and cook for another 5 minutes until heated through.
  4. Season with salt and pepper to taste.
  5. If desired, add cooked rice or orzo to the soup and stir to combine.
  6. Remove from heat and garnish with chopped fresh parsley before serving.

Notes

For a heartier soup, add cooked rice or orzo. Adjust lemon juice to your preferred level of tanginess.
