  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 cup orzo pasta
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup lemon juice, freshly squeezed
  • 1/4 cup chopped fresh parsley
  • Lemon wedges, for serving

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from pot and set aside.
  2. Add onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
  3. Pour in chicken broth, bring to a boil, then add orzo, oregano, and thyme. Season with salt and pepper to taste.
  4. Reduce heat and simmer for 8-10 minutes, or until orzo is cooked al dente.
  5. Stir in cooked chicken and lemon juice. Heat through.
  6. Stir in fresh parsley. Serve hot with lemon wedges.

Notes

For a creamier soup, stir in a dollop of Greek yogurt or sour cream before serving.
