  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef broth
  • 1 cup water
  • 9 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add onion and garlic to the pot and cook until softened, about 5 minutes. Stir in oregano, basil, and red pepper flakes (if using).
  3. Pour in crushed tomatoes, tomato sauce, beef broth, and water. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Add lasagna noodles to the soup and cook until tender, about 10-12 minutes.
  5. In a small bowl, combine ricotta cheese, Parmesan cheese, and parsley.
  6. Ladle soup into bowls and top with a dollop of the ricotta cheese mixture. Serve immediately.

Notes

For an extra layer of flavor, try browning the ground beef with Italian sausage. You can also add other vegetables like zucchini or spinach.
