Japanese Onion Soup

A delicate and savory Japanese Onion Soup featuring caramelized onions in a flavorful dashi broth, perfect as a comforting starter or light meal.

  • 2 large yellow onions, thinly sliced
  • 4 cups dashi broth
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp sugar
  • 1 tbsp vegetable oil
  • 2 green onions, thinly sliced
  • 1/2 tsp salt

Instructions

  1. Heat vegetable oil in a pot over medium heat. Add sliced onions and cook slowly, stirring occasionally, until caramelized and golden brown (about 20-25 minutes).
  2. Add sugar and stir to combine.
  3. Pour in dashi broth, soy sauce, and mirin. Stir well.
  4. Bring the soup to a gentle boil, then reduce heat and simmer for 10 minutes.
  5. Season with salt to taste.
  6. Ladle soup into bowls and garnish with sliced green onions before serving.

Notes

For a richer flavor, add a few slices of tofu or mushrooms, and serve with a side of steamed rice for a complete meal.
