Jalapeno Poppers Nourish Bowl

  • 4 jalapeno peppers, halved and seeded
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked quinoa
  • 1 cup mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup black beans, rinsed and drained
  • 1 small avocado, sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix cream cheese and shredded cheddar cheese in a bowl until well combined.
  3. Fill each jalapeno half with the cheese mixture.
  4. Place stuffed jalapenos on a baking sheet and bake for 15 minutes until cheese is melted and slightly golden.
  5. In a bowl, arrange mixed greens, cooked quinoa, cherry tomatoes, black beans, and avocado slices.
  6. Top the bowl with the warm jalapeno poppers.
  7. Drizzle olive oil over the bowl and season with salt and pepper to taste.
  8. Serve immediately and enjoy a balanced, spicy nourish bowl.

Notes

For extra crunch, sprinkle toasted pumpkin seeds on top or add a squeeze of fresh lime juice to brighten the flavors.
