Rustic Irish Potato Pie

This Irish Potato Pie is a sweet and creamy dessert that perfectly captures the essence of Ireland with its smooth potato filling and hints of cinnamon. It’s an unexpected treat that’s sure to become a new favorite!

  • 1 1/2 pounds russet potatoes, peeled and quartered
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 box (14.1 oz) refrigerated pie crusts

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Boil potatoes until tender, about 15-20 minutes. Drain well and mash until smooth.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the mashed potatoes, milk, vanilla extract, cinnamon, and nutmeg to the butter mixture. Mix well until smooth and creamy.
  5. Line a pie dish with one of the pie crusts. Crimp the edges.
  6. Pour the potato mixture into the pie crust.
  7. Top with the second pie crust, cut vents to allow steam to escape, and crimp the edges to seal.
  8. Bake for 45-50 minutes, or until the crust is golden brown and the filling is set.
  9. Let cool completely before serving.
