Honey Sriracha Chicken Rice Bowls

These Honey Sriracha Chicken Rice Bowls combine sweet and spicy flavors for a quick, satisfying meal perfect for weeknight dinners.

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp honey
  • 2 tbsp sriracha sauce
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp garlic, minced
  • 1 tsp ginger, grated
  • 2 cups cooked jasmine rice
  • 1 cup broccoli florets, steamed
  • 1/2 cup shredded carrots
  • 2 green onions, sliced
  • 1 tbsp sesame seeds (optional)
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together honey, sriracha, soy sauce, rice vinegar, garlic, and ginger.
  2. Heat vegetable oil in a skillet over medium-high heat. Season chicken pieces with salt and pepper.
  3. Add chicken to the skillet and cook for 6-8 minutes until browned and cooked through.
  4. Pour the honey sriracha sauce over the chicken and cook for another 2-3 minutes until the sauce thickens and coats the chicken well.
  5. Prepare the rice bowls by dividing cooked jasmine rice among bowls.
  6. Top the rice with cooked chicken, steamed broccoli, shredded carrots, and sliced green onions.
  7. Sprinkle sesame seeds over the bowls if desired and serve immediately.

Notes

For an extra crunch, add chopped peanuts or toasted cashews on top or serve with a side of kimchi for a Korean twist.
