Rustic Hobo Casserole Display

This Hobo Casserole is a hearty and comforting one-dish meal featuring ground beef, vegetables, and a creamy sauce, all baked to golden perfection. It’s a simple and satisfying dinner the whole family will love.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cups diced potatoes
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 can (10.75 ounces) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, brown ground beef over medium heat. Drain off any excess grease.
  3. Add chopped onion and cook until softened, about 5 minutes.
  4. Stir in diced potatoes and mixed vegetables.
  5. In a separate bowl, whisk together condensed cream of mushroom soup and milk.
  6. Pour the soup mixture over the ground beef and vegetable mixture. Season with salt and pepper.
  7. Transfer the mixture to a greased 9×13 inch baking dish.
  8. Bake for 30-40 minutes, or until the potatoes are tender.
  9. Sprinkle shredded cheddar cheese over the top and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  10. Let stand for a few minutes before serving.

Notes

For a richer flavor, use cream of celery or cream of chicken soup instead of cream of mushroom. Serve with a side of crusty bread for dipping.
