Hobo Casserole with Ground Beef is a hearty, comforting one-dish meal featuring savory ground beef, potatoes, and vegetables baked to perfection. It’s an easy-to-make classic perfect for family dinners.

Ingredients

  • 1 lb ground beef
  • 4 cups diced potatoes
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup ketchup
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, heat vegetable oil over medium heat. Add ground beef and cook until browned; drain excess fat.
  3. Add chopped onion and green bell pepper to the skillet; sauté until tender.
  4. In a large bowl, combine cream of mushroom soup, cream of chicken soup, ketchup, Worcestershire sauce, salt, and pepper. Mix well.
  5. Add the cooked beef mixture and diced potatoes to the bowl; stir to coat evenly.
  6. Transfer the mixture to a greased 9×13 inch casserole dish and spread evenly.
  7. Cover with foil and bake for 45 minutes.
  8. Remove foil, sprinkle shredded cheddar cheese over the top, and bake uncovered for an additional 15 minutes or until cheese is melted and bubbly.
  9. Let cool slightly before serving.

Notes

For extra flavor, add a pinch of smoked paprika or top with chopped fresh parsley before serving.
