These spooky Halloween Whoopie Pies are a fun and festive treat! Soft, chocolatey cakes filled with creamy vanilla frosting make for a delicious and adorable dessert.

  • 2 cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking soda
  • ¾ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup packed light brown sugar
  • ½ cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup boiling water
  • For the Filling:
  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 3-4 tablespoons milk
  • Orange and black sprinkles, for decorating

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate bowl, combine granulated sugar, brown sugar, vegetable oil, egg, and vanilla extract. Beat until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  5. Stir in the boiling water until the batter is smooth.
  6. Drop rounded tablespoons of batter onto the prepared baking sheets, leaving about 2 inches between each cookie.
  7. Bake for 8-10 minutes, or until the cakes spring back when lightly touched.
  8. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
  9. Make the Filling: In a large bowl, beat the softened butter until smooth and creamy.
  10. Gradually add the powdered sugar, beating until light and fluffy.
  11. Stir in the vanilla extract and milk until the frosting is smooth and spreadable.
  12. Assemble the Whoopie Pies: Spread a generous amount of frosting on the flat side of one cake. Top with another cake, flat side down, to create a sandwich.
  13. Roll the edges of the whoopie pies in orange and black sprinkles.
  14. Serve immediately or store in the refrigerator until ready to serve.
