Ground Beef Enchiladas

These Ground Beef Enchiladas are a flavorful and comforting Mexican-inspired dish featuring seasoned beef rolled in tortillas, topped with rich enchilada sauce and melted cheese.

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup enchilada sauce
  • 8 flour tortillas
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup chopped fresh cilantro (optional)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper, to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent, about 3 minutes.
  3. Add minced garlic and cook for 1 more minute until fragrant.
  4. Add ground beef to the skillet, breaking it apart with a spoon, and cook until browned and no longer pink.
  5. Stir in cumin, chili powder, salt, and pepper. Cook for another 2 minutes, then remove from heat.
  6. Spoon a small amount of enchilada sauce on the bottom of a baking dish to prevent sticking.
  7. Warm tortillas slightly to make them pliable. Place a scoop of beef mixture in each tortilla, sprinkle with cheese, roll up, and place seam side down in the dish.
  8. Pour remaining enchilada sauce evenly over the rolled tortillas, then top with remaining shredded cheese and black olives if using.
  9. Bake in preheated oven for 20 minutes or until cheese is melted and bubbly.
  10. Garnish with fresh cilantro before serving, if desired.

Notes

For extra flavor, serve with sour cream, guacamole, or a side of Mexican rice and beans. You can also substitute ground turkey for a leaner option.
