Greek Healing Soup

A warm and nourishing traditional Greek soup packed with fresh vegetables, herbs, and lemon, perfect for comforting and healing the body.

Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 6 cups vegetable broth
  • 1 cup cooked chickpeas
  • 1 cup cooked brown rice or orzo
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Add garlic, carrots, and celery; cook for another 5 minutes until vegetables soften.
  4. Stir in zucchini and cook for 3 minutes more.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and simmer for 15 minutes until vegetables are tender.
  7. Add cooked chickpeas, cooked brown rice (or orzo), dill, and parsley; stir well.
  8. Season with salt and black pepper to taste.
  9. Remove from heat and stir in fresh lemon juice.
  10. Serve hot, garnished with extra herbs if desired.

Notes

For added warmth and flavor, sprinkle with crumbled feta cheese or a drizzle of extra virgin olive oil before serving.
