These Goat Cheese Stuffed Mini Peppers are a delightful and easy appetizer or snack. Sweet mini peppers are filled with creamy, tangy goat cheese and herbs, then baked until tender for a burst of flavor in every bite.

  • 1 pound mini sweet peppers, assorted colors
  • 4 ounces goat cheese, softened
  • 2 tablespoons fresh herbs, finely chopped (such as chives, parsley, and thyme)
  • 1 tablespoon olive oil
  • Pinch of red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Wash and dry the mini peppers. Slice each pepper in half lengthwise, removing the seeds and membranes.
  3. In a small bowl, combine the softened goat cheese, chopped herbs, olive oil, red pepper flakes (if using), salt, and pepper. Mix well until everything is evenly combined.
  4. Spoon the goat cheese mixture into each pepper half, filling them generously.
  5. Arrange the stuffed peppers on a baking sheet lined with parchment paper.
  6. Bake for 15-20 minutes, or until the peppers are tender and the goat cheese is lightly golden.
  7. Let cool slightly before serving.
