Gluten Free Chicken Tenders

  • 1 lb chicken tenders
  • 1 cup gluten-free breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • 2 tbsp olive oil (optional, for drizzling)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow bowl, whisk the eggs.
  3. In another bowl, combine gluten-free breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  4. Dip each chicken tender in the egg, then coat thoroughly with the breadcrumb mixture.
  5. Place the coated tenders on the prepared baking sheet. Drizzle with olive oil if desired for extra crispiness.
  6. Bake for 15-20 minutes, flipping halfway through, until golden brown and cooked through.
  7. Remove from oven and let rest for a few minutes before serving.
