This comforting Ginger Scallion Chicken Noodle Soup combines aromatic ginger and fresh scallions with tender chicken and noodles for a flavorful and warming meal.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 tablespoon fresh ginger, minced
  • 4 scallions, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 2 boneless, skinless chicken breasts
  • 4 ounces egg noodles
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add minced ginger, scallions, and garlic; sauté for 2-3 minutes until fragrant.
  2. Pour in chicken broth and bring to a boil.
  3. Add chicken breasts to the pot, reduce heat to a simmer, and cook for 15-20 minutes until chicken is cooked through.
  4. Remove chicken breasts, shred them with two forks, and set aside.
  5. Add egg noodles to the simmering broth and cook according to package instructions (usually 5-7 minutes).
  6. Return shredded chicken to the pot along with soy sauce. Stir well and season with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro if desired.

Notes

For an extra kick, add a dash of chili oil or serve with lime wedges for a bright citrus twist.
