Georgia cracker salad is a simple and refreshing Southern dish featuring crushed crackers, fresh vegetables, and a tangy dressing that makes a perfect light lunch or side.

  • 6 saltine crackers
  • 1/2 cup mayonnaise
  • 1/4 cup sweet pickle relish
  • 1/4 cup finely chopped onion
  • 1/4 teaspoon black pepper
  • 1 small tomato, diced (optional)
  • 1 tablespoon sugar (optional)

Instructions

  1. Crush the saltine crackers into small pieces and place them in a mixing bowl.
  2. Add mayonnaise, sweet pickle relish, chopped onion, and black pepper to the crackers.
  3. Mix all ingredients thoroughly until the crackers are coated and the mixture is evenly combined.
  4. If using, fold in the diced tomato and sugar for added sweetness and freshness.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
  6. Serve chilled as a side dish or light lunch.

Notes

For added crunch, garnish with fresh celery slices or serve on a bed of lettuce. This salad also pairs wonderfully with grilled chicken or BBQ.
