This Garlic Parmesan Chicken Meatloaf is a flavorful and moist alternative to traditional beef meatloaf, featuring tender chicken blended with garlic and rich Parmesan cheese for a comforting dinner favorite.

  • 1 lb ground chicken
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 cup ketchup (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a loaf pan or line it with parchment paper.
  2. In a large bowl, combine ground chicken, Parmesan cheese, minced garlic, breadcrumbs, milk, egg, chopped onion, parsley, salt, pepper, oregano, and basil.
  3. Mix all ingredients gently until just combined — avoid overmixing to keep the meatloaf tender.
  4. Transfer the mixture into the prepared loaf pan, shaping it evenly.
  5. If desired, spread ketchup evenly over the top of the loaf for a sweet glaze.
  6. Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 165°F (74°C) and the top is golden brown.
  7. Remove from oven and let it rest for 10 minutes before slicing and serving.

Notes

For extra flavor, serve with a side of garlic mashed potatoes and steamed green beans. You can also substitute Italian seasoning for the oregano and basil for a slightly different herb profile.
