Hearty Bowl of Garlic Cheddar Potato Soup

This creamy and comforting Garlic Cheddar Potato Soup is loaded with cheesy flavor and fragrant garlic. It’s a simple and satisfying meal perfect for a chilly day.

Ingredients

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 large onion, chopped
  • 4 cups peeled and cubed Yukon Gold potatoes
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh chives
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add garlic and onion and cook until softened, about 5 minutes.
  2. Add potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  3. Use an immersion blender to partially blend the soup, leaving some chunks of potato for texture. Alternatively, carefully transfer half of the soup to a regular blender and blend until smooth, then return it to the pot.
  4. Stir in milk and cheddar cheese until cheese is melted and soup is smooth.
  5. Season with salt and pepper to taste.
  6. Garnish with fresh chives before serving.

Notes

For an extra layer of flavor, top with crispy bacon bits or a dollop of sour cream.
