Garlic Butter Fried Chicken

  • 4 bone-in, skin-on chicken thighs
  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup buttermilk
  • Vegetable oil, for frying
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. In a large bowl, combine the buttermilk with ½ tsp salt and the chicken thighs. Marinate for at least 1 hour in the refrigerator.
  2. In another bowl, mix flour, paprika, garlic powder, salt, and black pepper.
  3. Remove chicken from the buttermilk, letting excess drip off, then dredge thoroughly in the flour mixture. Set aside.
  4. Heat about 1 inch of vegetable oil in a large skillet over medium heat until it reaches 350°F (175°C).
  5. Fry the chicken thighs skin-side down for about 7-8 minutes until golden and crispy, then flip and cook another 6-7 minutes until fully cooked (internal temperature 165°F/74°C). Remove and drain on paper towels.
  6. In a separate small pan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Do not burn the garlic.
  7. Pour the garlic butter over the fried chicken thighs and garnish with chopped parsley if desired. Serve hot.

Notes

For extra crispiness, double-dip the chicken by repeating the buttermilk and flour coating before frying.
