Festive Mini Christmas Cakes with Ganache

Delight in these festive mini Christmas cakes topped with rich ganache, perfect for holiday celebrations and gift-giving.

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1/4 cup milk
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup mixed dried fruits (raisins, chopped dates, dried cranberries)
  • 1/4 cup chopped nuts (walnuts or pecans)
  • 1/2 tsp vanilla extract
  • For Ganache: 1/2 cup heavy cream
  • 1 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a mini cake tin.
  2. In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, cream the softened butter and sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture, beating well.
  5. Gradually add the dry ingredients alternately with milk, mixing until just combined.
  6. Fold in the dried fruits and chopped nuts gently.
  7. Divide the batter evenly into the mini cake tin and smooth the tops.
  8. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow cakes to cool completely on a wire rack.
  10. To make the ganache, heat the heavy cream until just boiling and pour over the chocolate chips. Let sit for 2 minutes, then stir until smooth.
  11. Pour or spread the ganache over each cooled mini cake and let set before serving.

Notes

For extra festive flair, decorate the ganache with edible gold glitter or sprinkle with crushed peppermint candy.
