This Egg Hashbrown Casserole is a hearty and comforting breakfast or brunch dish. Combining crispy hash browns, cheesy goodness, and fluffy eggs, it’s a perfect way to start your day or feed a crowd.

  • 1 (30 ounce) bag frozen shredded hash browns, thawed
  • 12 large eggs
  • 1 cup milk
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese, divided
  • 1/4 cup melted butter

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together eggs, milk, onion, green bell pepper, salt, and pepper.
  3. Stir in thawed hash browns and 1 1/2 cups of the shredded cheddar cheese.
  4. Pour the mixture into the prepared baking dish.
  5. Drizzle the melted butter evenly over the top of the casserole.
  6. Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
  7. Bake for 45-50 minutes, or until the casserole is set and the cheese is melted and golden brown.
  8. Let stand for 10 minutes before serving.

Notes

For a spicier kick, add a dash of hot sauce or some diced jalapenos to the egg mixture. You can also add cooked sausage or bacon for extra protein.
