Taco Casserole

A flavorful and easy-to-make Taco Casserole combining seasoned ground beef, beans, cheese, and tortillas baked to perfection for a hearty family meal.

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 6 small flour tortillas, cut into strips
  • 2 cups shredded cheddar cheese
  • 1 cup salsa
  • 1/2 cup chopped onions
  • 1/4 cup chopped cilantro (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.
  3. Add taco seasoning and water to the beef; simmer for 5 minutes.
  4. Stir in black beans, corn, and onions. Cook for another 2 minutes, season with salt and pepper.
  5. In a greased 9×9-inch baking dish, layer half of the tortilla strips.
  6. Spread half of the beef mixture over the tortillas.
  7. Sprinkle with 1 cup of shredded cheese and half of the salsa.
  8. Repeat layers with remaining tortilla strips, beef mixture, salsa, and cheese.
  9. Bake uncovered for 20 minutes or until cheese is melted and bubbly.
  10. Remove from oven and garnish with chopped cilantro before serving.

Notes

For extra creaminess, add a layer of sour cream or cream cheese before baking, and serve with avocado slices or guacamole.
