chicken noodle soup

A comforting and flavorful chicken noodle soup made with tender chicken, fresh vegetables, and egg noodles, perfect for warming up on any day.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 2 cups cooked chicken breast, shredded
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until softened, about 3 minutes.
  2. Add the carrots and celery, cooking for another 5 minutes until slightly tender.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the shredded chicken, thyme, and parsley, then reduce heat to simmer for 10 minutes.
  5. Stir in the egg noodles and cook until tender, about 7-8 minutes.
  6. Season with salt and pepper to taste. Serve hot.

Notes

For extra flavor, add a splash of fresh lemon juice or garnish with chopped fresh parsley before serving.
