  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickle juice
  • 1 cup crushed dill pickles (drained)
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • ½ cup all-purpose flour
  • 2 teaspoons garlic powder
  • 1 teaspoon dried dill
  • Salt and black pepper to taste
  • 2 tablespoons olive oil or butter for frying

Instructions

  1. Place chicken breasts in a bowl or zip-top bag and pour pickle juice over them. Marinate for at least 30 minutes, up to 2 hours, in the refrigerator.
  2. In a shallow dish, combine Parmesan cheese, panko breadcrumbs, garlic powder, dried dill, salt, and pepper.
  3. In another bowl, whisk eggs. Place flour in a third dish.
  4. Remove chicken from marinade and pat dry. Dredge each breast first in flour, then dip in eggs, and finally coat thoroughly in the Parmesan-pickle breadcrumb mixture.
  5. Heat olive oil or butter in a large skillet over medium heat. Cook chicken breasts for 5-7 minutes per side until golden brown and cooked through (internal temperature 165°F/74°C).
  6. Remove from skillet and let rest for a few minutes before serving.

Notes

For extra zest, squeeze fresh lemon juice over the chicken before serving or serve with a side of creamy ranch dressing for dipping.
