  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup whole milk
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 2 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the sugar and eggs until light and fluffy.
  4. Slowly add the melted butter, milk, lemon juice, lemon zest, and vanilla extract to the eggs and sugar mixture. Mix until combined.
  5. Gradually fold the dry ingredients into the wet ingredients until just combined. Avoid overmixing.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool the loaf in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
  9. To prepare the glaze, whisk together powdered sugar and lemon juice until smooth. Drizzle over the cooled loaf.

Notes

For an extra burst of freshness, garnish the loaf with thin lemon slices or a sprinkle of fresh thyme.
