Comforting crustless mushroom quiche

This crustless mushroom quiche is a healthy and flavorful dish combining tender mushrooms with a creamy egg custard, perfect for breakfast or a light meal.

  • 1 tablespoon olive oil
  • 1 cup sliced mushrooms
  • 1/2 cup chopped onions
  • 4 large eggs
  • 1 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch pie dish.
  2. Heat olive oil in a skillet over medium heat. Add mushrooms and onions, sauté until soft and lightly browned, about 5 minutes.
  3. In a mixing bowl, whisk together the eggs, milk, salt, pepper, and dried thyme until well combined.
  4. Spread the sautéed mushrooms and onions evenly in the prepared pie dish.
  5. Pour the egg mixture over the vegetables.
  6. Sprinkle shredded cheddar cheese evenly on top.
  7. Bake in the preheated oven for 35-40 minutes, or until the quiche is set and lightly golden on top.
  8. Remove from oven and let cool for 5 minutes. Garnish with fresh parsley if desired before serving.

Notes

For extra flavor, try adding a pinch of smoked paprika or serving with a fresh green salad on the side.
