  • 4 boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. In a skillet over medium heat, melt butter and sauté onion and garlic until translucent, about 3-4 minutes.
  3. Stir in the flour and cook for another minute to form a roux.
  4. Slowly whisk in chicken broth and heavy cream, stirring constantly until smooth and slightly thickened.
  5. Pour the gravy mixture over the chicken in the crockpot.
  6. Add dried thyme, salt, and pepper, then cover and cook on low for 4-5 hours or on high for 2-3 hours, until chicken is cooked through and tender.
  7. Before serving, shred the chicken slightly with two forks to mix it into the gravy.
  8. Garnish with fresh parsley if desired and serve warm.

Notes

For extra flavor, serve this gravy over mashed potatoes or buttered egg noodles. Adding a splash of white wine to the gravy mix can enhance the depth.
