This Crockpot Chicken and Stuffing recipe is a comforting and easy one-pot meal, perfect for busy weeknights. Tender chicken and flavorful stuffing cook together in your slow cooker, creating a delicious and satisfying dinner with minimal effort.

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 (6 ounce) package stuffing mix
  • 1 1/2 cups chicken broth
  • 1/2 cup melted butter
  • 1 can (10.75 ounce) condensed cream of chicken soup
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup chopped celery
  • Optional: 1/4 cup chopped onion

Instructions

  1. Place chicken breasts in the bottom of a slow cooker.
  2. In a large bowl, combine stuffing mix, chicken broth, melted butter, cream of chicken soup, thyme, pepper, celery, and onion (if using). Mix well.
  3. Pour the stuffing mixture over the chicken breasts, spreading evenly.
  4. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, or until the chicken is cooked through and the stuffing is tender.
  5. Shred the chicken with two forks before serving.

Notes

Serve with a side of cranberry sauce or your favorite green vegetable for a complete and balanced meal.
