This Crock Pot Creamy Cajun Chicken Pasta is a deliciously spicy and creamy dish that combines tender chicken with flavorful Cajun spices and tender pasta, perfect for an easy weeknight dinner.

  • 1 lb boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 3 cups chicken broth
  • 8 ounces penne pasta
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rub the chicken breasts with Cajun seasoning evenly on both sides.
  2. In a skillet, heat olive oil over medium heat and sear the chicken breasts for 2-3 minutes per side until browned. Transfer to the crock pot.
  3. Add sliced bell peppers, onion, and garlic to the crock pot with the chicken.
  4. Pour in chicken broth and stir gently to combine ingredients.
  5. Cover and cook on low for 4-5 hours or on high for 2-3 hours until chicken is cooked through.
  6. Remove the chicken breasts and shred them with two forks; return shredded chicken to the crock pot.
  7. Add uncooked penne pasta, heavy cream, and Parmesan cheese to the crock pot. Stir to combine.
  8. Cover and cook on high for an additional 30-40 minutes until pasta is tender, stirring occasionally to prevent sticking.
  9. Season with salt and pepper to taste.
  10. Garnish with chopped fresh parsley before serving.

Notes

For extra heat, add a pinch of cayenne pepper or serve with hot sauce on the side.
