Hearty Crock Pot Crack Potato Soup

This Crock Pot Crack Potato Soup is creamy, cheesy, and loaded with bacon! It’s the ultimate comfort food and so easy to make in your slow cooker.

Ingredients

  • 6-8 medium russet potatoes, peeled and cubed
  • 1 (32 ounce) carton chicken broth
  • 1 (8 ounce) package cream cheese, softened
  • 1 (1 ounce) package ranch dressing mix
  • 1/2 cup butter, melted
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • 1/4 cup chopped green onions, for garnish
  • Sour cream, for serving (optional)

Instructions

  1. Place potatoes and chicken broth in a slow cooker.
  2. In a separate bowl, combine softened cream cheese, ranch dressing mix, melted butter, garlic powder, salt, and pepper. Mix until smooth.
  3. Add the cream cheese mixture to the slow cooker and stir to combine.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until potatoes are tender.
  5. Use an immersion blender to blend the soup until smooth, or carefully transfer to a regular blender in batches.
  6. Stir in cheddar cheese and crumbled bacon. Cook until cheese is melted.
  7. Garnish with green onions and serve with sour cream, if desired.

Notes

For a thicker soup, mash some of the potatoes before blending. You can also add more cheese or bacon to taste.
