Crock Pot Chicken and Rice

This Crock Pot Chicken and Rice is a comforting, flavorful one-pot meal perfect for busy days, combining tender chicken with perfectly cooked rice and savory seasonings.

  • 4 boneless, skinless chicken breasts
  • 1 cup long grain white rice
  • 1 ½ cups chicken broth
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Lightly brown the chicken breasts in olive oil over medium heat; then transfer to the crock pot.
  2. Add the diced carrots, chopped onion, garlic, thyme, paprika, salt, and pepper to the crock pot.
  3. Pour in the chicken broth and stir gently to combine ingredients.
  4. Sprinkle the rice evenly over the mixture in the crock pot; do not stir.
  5. Cover and cook on low for 4 to 5 hours.
  6. About 30 minutes before serving, add the frozen peas on top; recover and continue cooking.
  7. Before serving, fluff the rice gently with a fork and ensure chicken is cooked through.

Notes

For extra flavor, garnish with fresh parsley and serve with a side of steamed vegetables or a green salad.
