  • 2 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 sandwich buns
  • 1/2 cup Caesar dressing
  • 1 cup romaine lettuce, chopped
  • 1/4 cup Parmesan cheese shavings

Instructions

  1. Pound chicken breasts to an even thickness.
  2. In three separate shallow dishes, place flour, beaten eggs, and a mixture of panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  3. Dredge each chicken breast in flour, then dip in the beaten eggs, and finally coat with the panko mixture.
  4. Heat olive oil in a large skillet over medium heat.
  5. Cook chicken breasts for 5-7 minutes per side, or until golden brown and cooked through.
  6. Lightly toast the sandwich buns.
  7. Spread Caesar dressing on the top and bottom buns.
  8. Place cooked chicken on the bottom bun, top with romaine lettuce and Parmesan cheese shavings, and then cover with the top bun.
  9. Serve immediately.

Notes

For an extra kick, add a dash of hot sauce to the Caesar dressing.
