Crispy Baked Ground Turkey Black Bean Tacos

These crispy baked ground turkey black bean tacos are a flavorful, healthy twist on classic tacos, combining lean protein and fiber-rich beans for a satisfying meal.

  • 1 lb ground turkey
  • 1 cup canned black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning or 2 tablespoons homemade taco spice blend
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro (optional)
  • 1 lime, cut into wedges
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic; sauté until soft, about 3 minutes.
  3. Add ground turkey to the skillet. Cook, breaking it apart with a spoon, until browned and cooked through, about 7 minutes.
  4. Stir in black beans and taco seasoning; cook for another 2 minutes. Season with salt and pepper to taste.
  5. Warm tortillas slightly to make them pliable, then spoon turkey mixture evenly onto each tortilla and fold.
  6. Place folded tacos seam side down on the prepared baking sheet. Bake for 10-12 minutes until the tortillas are crispy and slightly browned.
  7. Remove from oven and assemble tacos with shredded lettuce, diced tomatoes, cheese, and cilantro if using.
  8. Serve with lime wedges on the side for extra zest.

Notes

For extra crispiness, lightly brush the taco shells with olive oil before baking. Serve with avocado slices or a dollop of Greek yogurt for added creaminess.
