This creamy shrimp casserole combines tender shrimp with cheesy sauce and a crispy breadcrumb topping for a comforting and flavorful meal perfect for any occasion.

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup breadcrumbs
  • 2 tbsp grated parmesan cheese
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil and 1 tbsp butter in a skillet over medium heat. Sauté onions and garlic until translucent.
  3. Add mushrooms and cook until softened.
  4. Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes. Remove from heat.
  5. In a bowl, mix heavy cream, sour cream, and cheddar cheese. Season with salt and pepper.
  6. Combine shrimp mixture with the creamy sauce and stir gently.
  7. Transfer mixture to a greased casserole dish.
  8. Mix breadcrumbs, parmesan cheese, and remaining butter; sprinkle evenly over the casserole.
  9. Bake for 20-25 minutes until bubbly and golden on top.
  10. Garnish with fresh parsley before serving.

Notes

For extra crunch, broil the casserole for the last 2 minutes. Serve with a green salad or crusty bread.
