Creamy Roast Garlic and Lemon Pasta Sauce

This creamy roast garlic and lemon pasta sauce blends mellow roasted garlic with zesty lemon for a bright, comforting dish perfect for any pasta night.

  • 1 whole head of garlic
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 lemon (zest and juice)
  • Salt and freshly ground black pepper, to taste
  • 8 ounces pasta of your choice
  • 2 tablespoons unsalted butter
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off the garlic head to expose cloves, drizzle with 1 tablespoon olive oil, wrap in foil and roast for 30-35 minutes until soft.
  2. Cook pasta according to package instructions until al dente. Drain and set aside.
  3. Once garlic is cool enough to handle, squeeze softened cloves into a blender or bowl.
  4. In a saucepan, heat remaining 1 tablespoon olive oil and butter over medium heat.
  5. Add roasted garlic, heavy cream, lemon zest, and juice. Whisk and simmer gently for 5 minutes.
  6. Stir in grated Parmesan cheese until melted and sauce is creamy.
  7. Season with salt and pepper to taste.
  8. Toss sauce with cooked pasta until evenly coated.
  9. Serve garnished with chopped fresh parsley if desired.

Notes

For extra richness, add a splash of white wine while simmering the sauce or serve with grilled chicken for a heartier meal.
