Creamy Gnocchi with Spinach and Feta

  • 2 tbsp olive oil
  • 3 cups fresh spinach, roughly chopped
  • 1 cup crumbled feta cheese
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Cook gnocchi according to package instructions until they float to the surface. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chopped spinach and cook until wilted, about 2-3 minutes.
  4. Pour in the heavy cream and bring to a gentle simmer.
  5. Stir in the grated Parmesan and crumbled feta cheese until the sauce is creamy and smooth.
  6. Add the cooked gnocchi to the skillet, tossing gently to coat with the sauce.
  7. Season with salt, pepper, and red pepper flakes if using. Cook for another 2 minutes to combine flavors.
  8. Serve warm, garnished with extra Parmesan or fresh herbs if desired.
