  • 1.5 lbs shrimp, peeled and deveined
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • Salt and pepper to taste
  • Prepared mashed potatoes (amount as desired)

Instructions

  1. Prepare mashed potatoes according to your favorite recipe. Keep warm.
  2. In a large skillet, melt butter over medium heat.
  3. Add minced garlic to the skillet and cook for about 1 minute, until fragrant. Be careful not to burn the garlic.
  4. Add the shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through.
  5. Pour in the chicken broth and heavy cream. Bring to a simmer.
  6. Stir in the Parmesan cheese and parsley. Season with salt and pepper to taste.
  7. Simmer for 2-3 minutes, allowing the sauce to thicken slightly.
  8. Serve the creamy garlic shrimp over a bed of mashed potatoes. Garnish with extra parsley, if desired.
