Cranberry Orange Bread with Glaze

This moist and flavorful cranberry orange bread combines tart cranberries with fresh orange zest, topped with a sweet citrus glaze for a perfect breakfast treat or snack.

  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon orange zest
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 cup sour cream
  • 1/4 cup freshly squeezed orange juice
  • 1 1/2 cups fresh or frozen cranberries
  • For the glaze:
  • 3/4 cup powdered sugar
  • 2 tablespoons freshly squeezed orange juice

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and orange zest.
  3. In a large bowl, beat sugar and eggs until light and fluffy. Stir in melted butter, sour cream, and orange juice.
  4. Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
  5. Fold in cranberries carefully.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the bread cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
  9. For the glaze, whisk powdered sugar and orange juice together until smooth.
  10. Drizzle the glaze over the cooled bread and let set before slicing.

Notes

For extra flavor, try adding a teaspoon of cinnamon to the dry ingredients or sprinkling chopped nuts on top before baking.
