Fresh homemade cottage cheese flatbread pizza

A light and delicious cottage cheese flatbread pizza that combines creamy cottage cheese and fresh toppings for a quick, healthy meal.

Ingredients

  • 2 flatbreads
  • 1 cup cottage cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup sliced cherry tomatoes
  • 1/4 cup fresh spinach leaves
  • 1/4 cup thinly sliced red onion
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the flatbreads on a baking sheet lined with parchment paper.
  3. Spread an even layer of cottage cheese over each flatbread.
  4. Sprinkle shredded mozzarella evenly on top of the cottage cheese.
  5. Arrange cherry tomatoes, spinach, and red onion slices over the cheese layer.
  6. Drizzle olive oil over the toppings and sprinkle with dried oregano, salt, and pepper.
  7. Bake in the preheated oven for 12-15 minutes, or until the cheese is melted and the flatbreads are crisp.
  8. Remove from oven and garnish with fresh basil leaves before serving.

Notes

For extra flavor, add a sprinkle of red pepper flakes or a drizzle of balsamic glaze before serving.
