Light and protein-packed, these Cottage Cheese Egg Bites make a perfect breakfast or snack that’s both creamy and satisfying.

  • 4 large eggs
  • 1/2 cup cottage cheese
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup finely chopped spinach
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Cooking spray or butter for greasing

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin with cooking spray or butter.
  2. In a mixing bowl, whisk the eggs until smooth.
  3. Add the cottage cheese, shredded cheddar, chopped spinach, salt, pepper, and garlic powder to the eggs and stir to combine.
  4. Pour the mixture evenly into the prepared muffin tin cups.
  5. Bake for 20-25 minutes or until the egg bites are set and slightly golden on top.
  6. Remove from oven and let cool for a few minutes before removing from the tin.
  7. Serve warm and enjoy your protein-rich egg bites!
