This Cottage Cheese Cinnamon Roll Mug Cake is a quick and healthy dessert that combines creamy cottage cheese with warm cinnamon flavors for a delicious single-serving treat.

  • 1 egg
  • 2 tbsp flour
  • 1 tbsp sugar
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tbsp brown sugar
  • 1 tsp melted butter
  • Pinch of salt

Instructions

  1. In a small bowl, whisk together the egg, cottage cheese, vanilla extract, and sugar until smooth.
  2. Add flour, baking powder, cinnamon, and a pinch of salt; mix until just combined.
  3. In a separate small bowl, mix the brown sugar, melted butter, and a little cinnamon to create the cinnamon swirl.
  4. Pour half of the batter into a microwave-safe mug, then dollop the cinnamon swirl mixture on top.
  5. Pour the remaining batter over the cinnamon mixture and gently swirl with a toothpick or knife to create a marbled effect.
  6. Microwave on high for 1 to 1.5 minutes, or until the cake has risen and is set in the center.
  7. Allow to cool for a minute before enjoying your mug cake warm.
