Delicious Cornbread Casserole

This creamy and comforting cornbread casserole is a crowd-pleasing side dish or a hearty vegetarian main course. It features sweet corn, sour cream, and cheddar cheese baked to golden perfection.

  • 1 box (15 ounces) corn muffin mix
  • 1 cup sour cream
  • 1 can (15 ounces) creamed corn
  • 1 can (15 ounces) whole kernel corn, drained
  • 1 cup shredded cheddar cheese
  • 1/2 cup (1 stick) butter, melted
  • 2 large eggs, lightly beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, combine the corn muffin mix, sour cream, creamed corn, whole kernel corn, cheddar cheese, melted butter, eggs, salt, and pepper. Stir until well combined.
  3. Pour the mixture into the prepared baking dish.
  4. Bake for 30-35 minutes, or until golden brown and set. A toothpick inserted into the center should come out clean.
  5. Let cool for a few minutes before serving.

Notes

For a spicier version, add 1/2 cup of diced jalapeños to the mixture.
